- 3 medium bell peppers (mixed colors), sliced into strips
- 1 medium yellow onion, sliced into half-moons
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 tablespoon soy sauce
- 1 teaspoon brown sugar
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Slice the smoked sausage, bell peppers, and onion. Mince the garlic.
- Heat olive oil in a 12-inch skillet over medium-high heat.
- Add sliced sausage in a single layer and sear for 2 minutes per side until browned. Remove sausage and set aside.
- In the same pan, add onions and peppers. Cook for 3 minutes until softened and charred.
- Push veggies to the side; add garlic, thyme, and brown sugar to the center. Cook for 30 seconds until fragrant.
- Return sausage to the pan, pour in soy sauce, and toss to combine. Cook for 1 minute.
- Remove from heat and stir in butter until melted. Season with salt and pepper to taste.
- Serve immediately, optionally over rice or with crusty bread.
Notes
Do not crowd the pan to ensure proper searing rather than steaming. Use low-sodium soy sauce if concerned about sodium content. The dish can be served over rice, quinoa, or egg noodles to stretch the meal. Leftovers store well in the fridge for up to 4 days.
