  • 1.5 lbs ground beef (80/20 blend)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 24 chipotle peppers in adobo sauce, minced (plus 2 tbsp sauce)
  • 2 cans (28 oz each) tomato sauce
  • 1 cup beef broth (low-sodium)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 oz semi-sweet dark chocolate
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tablespoons tomato paste
  • Salt and black pepper to taste

Instructions

  1. Heat a large Dutch oven over medium-high heat. Add ground beef and brown, breaking it up with a spatula. Drain excess grease, leaving about a tablespoon if desired. Transfer beef to a bowl.
  2. In the same pot, sauté diced onion over medium heat for 3-4 minutes until soft. Add minced garlic and cook for 1 minute until fragrant.
  3. Add chili powder, cumin, and oregano to the onions and garlic. Stir constantly for 30-60 seconds to bloom the spices.
  4. Stir in tomato paste and cook for 1 minute. Pour in beef broth, scraping the bottom of the pot to release browned bits. Add tomato sauce, beans, minced chipotle peppers, and adobo sauce. Stir to combine.
  5. Return the browned beef to the pot and add the square of dark chocolate. Stir to incorporate.
  6. Bring the chili to a boil, then reduce heat to low. Cover partially and simmer for 30-45 minutes, stirring occasionally.
  7. Taste and adjust seasoning with salt, pepper, or more chipotle sauce for heat. Let rest for 5 minutes before serving.

Notes

For a slow cooker version, brown the beef and onions first, then dump everything into the slow cooker and cook on low for 6-8 hours. The chili tastes better the next day as flavors meld. It freezes well for up to 3 months. Control heat by adjusting the number of chipotle peppers used.
