Description

A creamy, smoky, and spicy queso dip made with Velveeta cheese and chipotle peppers in adobo, perfect for game day snacks and easy to prepare.


Ingredients

  • 16 oz Velveeta cheese (450 g)
  • 1 cup whole milk (240 ml)
  • 2 chipotle peppers in adobo sauce plus 1 tablespoon adobo sauce
  • 1 can diced tomatoes with green chilies (10 oz / 280 g)
  • ½ medium yellow onion, finely diced (about 75 g)
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 1 teaspoon ground cumin
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon black pepper
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat 1 tablespoon of oil in a medium saucepan over medium heat. Add diced onion and cook, stirring occasionally, until soft and translucent, about 3-4 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in chopped chipotle peppers, adobo sauce, ground cumin, salt, and black pepper. Cook for 1 minute to bloom the spices.
  4. Add canned diced tomatoes with green chilies (do not drain). Stir and simmer for 2 minutes to meld flavors.
  5. Cut Velveeta cheese into cubes. Reduce heat to low and add cheese cubes and milk to the pan.
  6. Stir gently and constantly to avoid scorching until cheese melts and forms a creamy dip, about 7-8 minutes.
  7. Taste and adjust seasoning with more salt or chipotle if desired. If too thick, add a splash more milk; if too thin, simmer longer on low heat.
  8. Transfer to a serving bowl and garnish with chopped fresh cilantro if desired. Serve warm with tortilla chips, fresh veggies, or toasted bread.
