Ingredients
- 2 ¾ cups all-purpose flour (345g)
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened (226g)
- 4 oz cream cheese, softened (115g)
- 1 ½ cups granulated sugar (300g)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons ground cinnamon
- ¼ cup brown sugar (50g)
- For the Frosting:
- 4 oz cream cheese, softened (115g)
- ¼ cup unsalted butter, softened (57g)
- 1 ½ cups powdered sugar (180g)
- ½ teaspoon vanilla extract
- 1–2 tablespoons milk (15-30ml)
Instructions
- Prepare the Dough (15 minutes): Whisk together flour, baking powder, and salt in a medium bowl. In a mixer, cream softened butter, cream cheese, and granulated sugar until light and fluffy (3-4 minutes). Add egg and vanilla extract, mixing until combined. Gradually add dry ingredients to wet, mixing on low speed just until combined. Do not overmix.
- Make the Cinnamon Sugar Swirl (5 minutes): Mix brown sugar and cinnamon in a small bowl until fully combined.
- Roll and Fill the Dough (10 minutes): Divide dough in half. On a lightly floured surface, roll one half into a ¼-inch thick rectangle (about 9×12 inches). Sprinkle half the cinnamon sugar mixture evenly over the dough. Roll tightly from the longer edge and pinch seam to seal. Repeat with second half and remaining cinnamon sugar.
- Slice and Bake (15-18 minutes): Slice rolled dough into ½-inch thick rounds using a sharp knife or pizza cutter. Place cookies 2 inches apart on parchment-lined baking sheet. Chill dough rolls for 10 minutes if dough is too sticky. Bake at 350°F (175°C) for 15-18 minutes until edges are golden but centers remain soft. Cool on baking sheet for 5 minutes, then transfer to cooling rack.
- Make the Frosting & Decorate (10 minutes): Beat cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and milk to reach spreadable consistency. Spread or pipe frosting on cooled cookies. Optionally sprinkle cinnamon sugar on top.
