Description

A bright, refreshing lemon herb drink combining fresh blackberries, sage, and zesty lemon juice with sparkling water for a sophisticated, easy-to-make beverage perfect for any occasion.


Ingredients

  • 1 cup fresh blackberries (about 150g)
  • 68 fresh sage leaves
  • 1 cup fresh lemon juice (about 45 lemons, 240ml)
  • 3/4 cup granulated sugar (150g)
  • 1 cup water (240ml, for syrup)
  • 4 cups club soda or sparkling water (960ml)
  • Ice cubes
  • Lemon slices and extra sage for garnish

Instructions

  1. In a medium saucepan, combine blackberries, sugar, water, and sage leaves. Bring to a gentle simmer over medium heat, stirring occasionally. Simmer for 7-8 minutes until syrup thickens slightly and smells herby and fruity.
  2. Remove from heat and let syrup cool for a couple of minutes. Pour through a fine mesh sieve into a bowl or pitcher, pressing gently to extract liquid. Discard solids.
  3. Juice 4-5 lemons to yield 1 cup (240ml) fresh lemon juice. Strain out seeds.
  4. In a large pitcher, combine the strained blackberry sage syrup and fresh lemon juice. Stir well.
  5. Add 4 cups (960ml) chilled club soda or sparkling water. Stir gently to mix without losing bubbles.
  6. Add plenty of ice cubes. Pour into glasses and garnish with lemon slices and fresh sage sprigs. Serve immediately.

Notes

Use fresh lemon juice for best flavor. The blackberry sage syrup can be made ahead and stored in the fridge up to 5 days. Adjust sugar to taste. For a different herbal note, substitute sage with thyme or rosemary in smaller amounts. Use chilled sparkling water and lemon juice for the freshest fizz. Frozen blackberries can be used but simmer syrup longer.
