- 8 oz (225g) full-fat brick cream cheese, softened
- 1/2 cup (120g) full-fat sour cream
- 1/2 cup (120g) real mayonnaise
- 4 cloves garlic, minced
- 10 oz (280g) frozen chopped spinach, thawed and thoroughly squeezed dry
- 1 can (14 oz) artichoke hearts, drained and chopped
- 2 teaspoons Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 cups (200g) shredded low-moisture mozzarella cheese
- 1/2 cup (50g) freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill to medium-high heat (375°F-400°F). For charcoal, bank coals to the sides for indirect heat; for gas, turn one side on high and leave the other off.
- In a mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, minced garlic, Italian seasoning, and red pepper flakes. Mix until smooth.
- Fold in the squeezed spinach and chopped artichoke hearts until the mixture is thick and chunky.
- Spread the mixture evenly into a 10-inch cast iron skillet or heat-safe dish.
- Sprinkle the shredded mozzarella and Parmesan cheese evenly over the top without pressing down.
- Place the skillet on the grill over indirect heat. Cover the grill lid and cook for 15-20 minutes.
- If the top browns too quickly, cover loosely with aluminum foil to prevent burning while the center heats through.
- Remove from the grill when the cheese is melted, bubbly, and slightly browned. Let rest for 2-3 minutes to thicken.
- Garnish with fresh parsley and serve immediately with crusty bread, tortilla chips, or grilled vegetables.
Notes
Ensure the frozen spinach is thoroughly squeezed dry to prevent a watery dip. Shred your own cheese for better melting. Use indirect heat on the grill to avoid burning the cheese before the dip is heated through. This dip does not freeze well due to the dairy content.
