  • 4 cups chopped broccoli florets (about 300g / 10.5 oz)
  • 6 strips thick-cut bacon
  • 1/4 medium red onion, thinly sliced (about 40g / 1.4 oz)
  • 1/2 cup sunflower seeds (70g / 2.5 oz), toasted
  • 1/2 cup raisins (75g / 2.6 oz)
  • 1/2 cup mayonnaise (120ml / 4 fl oz)
  • 2 tablespoons apple cider vinegar (30ml / 1 fl oz)
  • 1 tablespoon honey (20g / 0.7 oz)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the bacon over medium heat in a skillet until golden and crispy, about 8-10 minutes. Drain on paper towels and crumble once cooled.
  2. Chop broccoli into small florets. Thinly slice red onion and soak in cold water for 10 minutes if desired to mellow the bite, then drain.
  3. Toast sunflower seeds in a dry pan over medium heat for 2-3 minutes until fragrant, stirring constantly.
  4. In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and black pepper. Adjust seasoning to taste.
  5. In a large mixing bowl, combine broccoli, red onion, toasted sunflower seeds, and raisins. Pour dressing over and toss gently to coat.
  6. Sprinkle crumbled bacon on top and gently mix once more to keep bacon crunchy.
  7. Chill salad in the refrigerator for 30 minutes to 1 hour before serving for best flavor, or serve immediately.

Chop broccoli small for better dressing cling and easier eating. Soak onion slices in cold water to mellow bite. Toast sunflower seeds for extra nuttiness. Cook bacon slowly to avoid burnt spots.
