Instructions

  1. Toast the sliced almonds in a dry skillet over medium heat, stirring frequently, until golden and fragrant, about 3-4 minutes. Set aside to cool.
  2. In a large bowl, beat the softened butter and granulated sugar together using an electric mixer or whisk until light and fluffy, about 3 minutes.
  3. Beat in the egg and vanilla extract until fully combined. The batter may look slightly curdled, which is normal.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or folding with a spatula until just combined. Avoid overmixing.
