Description
A light and airy sponge cake soaked in a rich mixture of three milks and topped with spiced cinnamon whipped cream. This make-ahead dessert is perfect for celebrations and gatherings.

- 6 large eggs, room temperature
- 1 cup (200g) granulated sugar
- 2 teaspoons vanilla extract
- 1 cup (125g) all-purpose flour, sifted
- ½ teaspoon salt
- 1 cup (240ml) whole milk
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 2 cups (480ml) heavy whipping cream, cold
- ¼ cup (30g) confectioners’ sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: Fresh berries or toasted coconut for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper if desired.
- In a stand mixer or hand mixer, whip room temperature eggs on high speed for 5-7 minutes until pale, thick, and tripled in volume.
- Sift flour and salt over the whipped eggs. Gently fold into the eggs using a spatula until no streaks remain, being careful not to deflate the batter.
- Pour batter into the prepared pan and bake for 25-30 minutes until golden brown and a toothpick comes out clean. Cool in the pan for 10 minutes.
- While the cake cools, whisk together whole milk, evaporated milk, and sweetened condensed milk.
- Poke holes all over the warm cake surface using a wooden spoon handle or chopstick, going almost to the bottom.
- Slowly pour the milk mixture over the cake. Let it sit for 10 minutes to absorb, then cover and refrigerate for at least 4 hours or overnight.
- About 30 minutes before serving, whip cold heavy cream, confectioners’ sugar, cinnamon, vanilla, and salt until stiff peaks form.
- Spread the cinnamon whipped cream over the chilled cake. Garnish with fresh berries or toasted coconut if desired. Serve immediately.
Notes
Room temperature eggs are essential for proper volume. Cold cream and chilled bowls help the whipped cream hold its shape. The cake is best made the night before to allow flavors to meld. It does not freeze well due to the milk soak.
