- 1/2 cup (40g) unsweetened cocoa powder
- 3–4 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 2–3 tablespoons unsweetened almond milk
- 1/4 teaspoon fine sea salt
- Flaky sea salt for topping
- Fresh berries for topping
- Coconut cream for topping
- Chocolate shavings for topping
Instructions
- Cut avocados in half, remove pits, and scoop the flesh into a blender or food processor.
- Add maple syrup, vanilla extract, and almond milk to the blender.
- Add cocoa powder and fine sea salt.
- Pulse briefly to break up the avocado, then blend on high until completely smooth and creamy, scraping down the sides with a spatula as needed.
- If the mixture is too thick, add more milk; if too thin, add more cocoa.
- Transfer the mousse into two small bowls.
- Refrigerate for 15-30 minutes to chill and firm up.
- Top with flaky sea salt, fresh berries, coconut cream, or chocolate shavings before serving.
Notes
Ensure avocados are ripe but not mushy for the best texture. Salt is crucial to enhance the chocolate flavor. The mousse can be stored in an airtight container in the fridge for up to 2 days, though it is best enjoyed fresh. If leftovers occur, stir in a splash of milk to loosen the thickened texture.
