  • 3/4 cup (130g) vegan chocolate chips (semi-sweet or dark)
  • Optional: 1/4 cup chopped peanuts
  • Optional: 1 tablespoon ground flaxseed

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, combine the peanut butter and brown sugar. Beat together with a hand mixer or wooden spoon until smooth and creamy, about 2 minutes.
  3. Add the vanilla extract and non-dairy milk to the peanut butter mixture and beat until fully incorporated and glossy.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding with a spoon until just combined. Avoid overmixing.
  6. Gently fold in the vegan chocolate chips and optional chopped peanuts until evenly distributed.
