Description
A simplified, rustic version of the viral baked feta pasta featuring blistered cherry tomatoes, creamy feta, and fresh basil, ready in under 40 minutes.

- 7–8 oz (200-250g) block of Feta Cheese
- 1 pint (250g) Cherry Tomatoes
- 1/3 cup (80ml) Extra Virgin Olive Oil
- 4–6 cloves Garlic, sliced thin
- 1 teaspoon Dried Oregano
- 1 pound (450g) Penne or Fusilli pasta
- 1/2 cup packed Fresh Basil, torn
- 1 teaspoon Black Pepper, freshly cracked
- Salt, to taste
- 1 cup Reserved Pasta Water
Instructions
- Preheat oven to 400°F (200°C).
- Pour olive oil into a 9×13 inch baking dish to coat the bottom.
- Place the block of feta cheese in the center of the dish.
- Scatter cherry tomatoes around the feta block.
- Drizzle with additional olive oil if needed, then sprinkle with sliced garlic and dried oregano.
- Bake for 30-35 minutes until tomatoes are blistered/soft and feta is golden and soft.
- While baking, bring a large pot of salted water to a boil and cook pasta until al dente.
- Reserve 1 cup of pasta water before draining.
- Remove baking dish from oven and mash the feta and tomatoes together until chunky and creamy.
- Add drained pasta to the baking dish and toss with the sauce.
- Add reserved pasta water as needed to emulsify the sauce and coat the pasta.
- Remove from heat, tear fresh basil over the top, add black pepper, and serve immediately.
Notes
Use a solid block of feta, not crumbled, for the best creamy texture. Do not skip the pasta water; the starch helps the sauce cling to the pasta. Fresh basil should be added at the end to prevent it from turning bitter. This dish does not freeze well due to the dairy content.
