  • 2 cans (15oz each) white beans (cannellini or Great Northern), rinsed and drained
  • Salt and black pepper to taste
  • 1 cup shredded Monterey Jack cheese (optional)
  • ¼ cup fresh cilantro, chopped (optional)
  • Lime wedges (optional)
  • 12 jalapeños, sliced (optional)
  • Sour cream (optional)

Instructions

  1. Prep ingredients: Chop onion, mince garlic, drain/rinse beans, shred chicken, and soften cream cheese.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  3. Add minced garlic and cook for 1 minute until fragrant but not browned.
  4. Add cumin and chili powder, stirring for 30 seconds to toast the spices.
  5. Pour in chicken broth and bring to a gentle simmer. Add green chiles, drained beans, and shredded chicken.
  6. Simmer for 5-7 minutes to allow flavors to meld.
  7. Remove pot from heat. Gradually add softened cream cheese, whisking constantly until smooth and melted.
  8. Taste and season with salt and black pepper. Stir in Monterey Jack cheese if using.
  9. Serve hot, topped with cilantro, sour cream, jalapeños, and a squeeze of lime.

Notes

Ensure cream cheese is softened to room temperature to prevent clumping. Use low-sodium broth to control salt levels as canned beans and chiles are salty.
