Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 4 cups chicken broth (low-sodium)
- 3 cups shredded rotisserie chicken or canned chicken, drained
- 1 can (4oz) mild diced green chiles
- 8oz block cream cheese, softened
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 cans (15oz each) white beans (cannellini or Great Northern), rinsed and drained
- Salt and black pepper to taste
- 1 cup shredded Monterey Jack cheese (optional)
- ¼ cup fresh cilantro, chopped (optional)
- Lime wedges (optional)
- 1–2 jalapeños, sliced (optional)
- Sour cream (optional)
Instructions
- Prep ingredients: Chop onion, mince garlic, drain/rinse beans, shred chicken, and soften cream cheese.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for 3-4 minutes until softened.
- Add minced garlic and cook for 1 minute until fragrant but not browned.
- Add cumin and chili powder, stirring for 30 seconds to toast the spices.
- Pour in chicken broth and bring to a gentle simmer. Add green chiles, drained beans, and shredded chicken.
- Simmer for 5-7 minutes to allow flavors to meld.
- Remove pot from heat. Gradually add softened cream cheese, whisking constantly until smooth and melted.
- Taste and season with salt and black pepper. Stir in Monterey Jack cheese if using.
- Serve hot, topped with cilantro, sour cream, jalapeños, and a squeeze of lime.
Notes
Ensure cream cheese is softened to room temperature to prevent clumping. Use low-sodium broth to control salt levels as canned beans and chiles are salty. This recipe does not freeze well due to the dairy content; store leftovers in the fridge for up to 4 days. Reheat gently with a splash of milk or broth to restore creaminess.
