  • 68 large bagels (plain, sesame, or poppy seed), torn into 1-inch chunks
  • 23 tablespoons Everything Bagel Seasoning
  • 2 cups shredded sharp cheddar cheese
  • 8 oz cream cheese, softened and cut into small cubes
  • 8 large eggs
  • 2 cups heavy cream or whole milk
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup cooked bacon, crumbled (optional)
  • 1 cup diced ham (optional)
  • 1/2 cup sliced green onions (optional)

Instructions

  1. Tear bagels into rough 1-inch chunks. If fresh, let them sit out for 10 minutes to dry slightly.
  2. Grease a 9×13 inch baking dish with butter or non-stick spray. Sprinkle half of the everything bagel seasoning on the bottom.
  3. Layer half of the bagel chunks, half of the cheddar cheese, half of the cream cheese cubes, and any optional meats in the dish. Repeat with remaining ingredients.
  4. In a large bowl, whisk eggs, heavy cream, garlic powder, salt, and pepper until smooth.
  5. Pour the custard mixture evenly over the layered ingredients. Gently press down on bagels to help them absorb the liquid.
  6. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 30 minutes, ideally overnight.
  7. Preheat oven to 350°F (175°C). Let the casserole sit at room temperature for 15 minutes while oven heats.
  8. Sprinkle remaining everything bagel seasoning on top.
  9. Bake for 45-55 minutes until the center is set and the top is golden brown. Tent with foil if browning too quickly.
  10. Let rest for 10-15 minutes before slicing and serving.

Notes

Stale bagels work best as they absorb the custard without turning to mush. If using fresh bagels, let them dry out first. Do not skip the resting time in the fridge, as it allows the bagels to hydrate properly. The recipe is customizable; add-ins like bacon, ham, or vegetables can be included.
