- 1 large bag (14–16 oz) sturdy, thick-cut tortilla chips
- 1 pound (450g) ground beef (80/20)
- 2 tablespoons taco seasoning
- 2 cups (200g) shredded sharp cheddar cheese
- 1 cup (100g) shredded Monterey Jack cheese
- 1 can (15 oz) black beans, drained and rinsed
- 1–2 fresh jalapeños, sliced
- 1 medium red onion, finely diced
- 2 medium Roma tomatoes, diced and drained
- 4–5 stalks green onions, sliced
- 1 cup (240g) sour cream
- 1 cup (240g) salsa
- 2 tablespoons water (for meat sauce)
Instructions
- Preheat oven to 375°F (190°C). Line a large rimmed sheet pan (18×13 inch) with parchment paper.
- Chop onion, dice tomatoes, slice jalapeños, and mince green onions. Drain and rinse black beans. Grate cheeses.
- Heat a skillet over medium-high heat. Add ground beef and cook until no longer pink, breaking it up with a spoon. Drain excess fat if desired.
- Stir in taco seasoning and 2 tablespoons of water. Simmer for 2 minutes until sauce thickens. Set aside.
- Spread a single layer of tortilla chips across the prepared sheet pan.
- Sprinkle half of the shredded cheese evenly over the chips.
- Spread the seasoned ground beef evenly over the cheese. Sprinkle black beans, diced tomatoes, red onion, and jalapeños on top.
- Sprinkle the remaining cheese over the toppings.
- Bake for 8-10 minutes until cheese is melted and bubbly and chip edges are golden.
- Remove from oven and immediately sprinkle with green onions.
- Serve hot with dollops of sour cream and salsa on the side.
Notes
Do not overcrowd the pan; use a single layer of chips to prevent sogginess. Shred your own cheese for better melting. Drain wet ingredients like tomatoes and salsa thoroughly. For a vegetarian version, substitute beef with extra beans or meat substitutes. Assemble up to an hour ahead and refrigerate before baking.
