  • 1 large bag (1416 oz) sturdy, thick-cut tortilla chips
  • 1 pound (450g) ground beef (80/20)
  • 2 tablespoons taco seasoning
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1 cup (100g) shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 12 fresh jalapeños, sliced
  • 1 medium red onion, finely diced
  • 2 medium Roma tomatoes, diced and drained
  • 45 stalks green onions, sliced
  • 1 cup (240g) sour cream
  • 1 cup (240g) salsa
  • 2 tablespoons water (for meat sauce)

Instructions

  1. Preheat oven to 375°F (190°C). Line a large rimmed sheet pan (18×13 inch) with parchment paper.
  2. Chop onion, dice tomatoes, slice jalapeños, and mince green onions. Drain and rinse black beans. Grate cheeses.
  3. Heat a skillet over medium-high heat. Add ground beef and cook until no longer pink, breaking it up with a spoon. Drain excess fat if desired.
  4. Stir in taco seasoning and 2 tablespoons of water. Simmer for 2 minutes until sauce thickens. Set aside.
  5. Spread a single layer of tortilla chips across the prepared sheet pan.
  6. Sprinkle half of the shredded cheese evenly over the chips.
  7. Spread the seasoned ground beef evenly over the cheese. Sprinkle black beans, diced tomatoes, red onion, and jalapeños on top.
  8. Sprinkle the remaining cheese over the toppings.
  9. Bake for 8-10 minutes until cheese is melted and bubbly and chip edges are golden.
  10. Remove from oven and immediately sprinkle with green onions.
  11. Serve hot with dollops of sour cream and salsa on the side.

Notes

Do not overcrowd the pan; use a single layer of chips to prevent sogginess. Shred your own cheese for better melting. Drain wet ingredients like tomatoes and salsa thoroughly. For a vegetarian version, substitute beef with extra beans or meat substitutes. Assemble up to an hour ahead and refrigerate before baking.
