  • 1/2 teaspoon salt
  • 1 cup (170g) semi-sweet chocolate chips or chopped chocolate
  • 2 cups (120g) mini marshmallows
  • 1/2 cup (50g) graham cracker crumbs
  • 1/2 cup toasted pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8-inch cast-iron skillet and line with parchment paper if desired.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  3. Add the egg and vanilla extract, mixing until just combined.
  4. Stir in the flour, baking powder, and salt until the dough is thick and sticky.
  5. Press the dough evenly into the prepared skillet, aiming for about 1/2-inch thickness.
  6. Scatter chocolate chips over the dough and bake for 12-15 minutes until edges are set but center is soft.
  7. Turn on the broiler. Sprinkle mini marshmallows evenly over the hot cookie.
  8. Broil for 1-3 minutes, watching closely, until marshmallows are golden brown and puffy.
  9. Immediately sprinkle graham cracker crumbs (and nuts, if using) over the hot marshmallows.
  10. Let cool for 5-10 minutes before serving warm.

Notes

Ensure butter is softened to room temperature for proper creaming. Watch the broiler closely as marshmallows can burn quickly. For a gluten-free version, use a 1:1 gluten-free flour blend.
