A budget-friendly, freezer-friendly recipe for crispy bacon-wrapped jalapeno poppers with a creamy cheddar and cream cheese filling, perfect for solo living or tailgating.

- 8 oz block cream cheese (softened)
- 1 cup sharp cheddar cheese (shredded)
- 3–4 stalks green onions (finely chopped)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 12 large jalapeno peppers
- 12–14 slices thick-cut bacon
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and pat dry jalapenos, then slice them in half lengthwise.
- Use a spoon or knife tip to scrape out seeds and white ribs from the jalapeno halves.
- In a mixing bowl, combine softened cream cheese, shredded cheddar, green onions, garlic powder, salt, and pepper until smooth.
- Press the cheese mixture firmly into each jalapeno half to fill it to the brim.
- Wrap one slice of bacon around each stuffed jalapeno half, securing with a toothpick if necessary.
- Place poppers on the baking sheet and bake for 20-25 minutes until bacon is crispy and peppers are tender.
- Let cool for 5 minutes before serving.
Notes
For mild poppers, remove all seeds and ribs. For spicy, leave some in. You can freeze raw, wrapped poppers for up to 3 months; bake from frozen adding 5-10 minutes to cook time. Reheat leftovers in oven or air fryer to maintain crispiness.
